With only three ingredients and the texture of creamy, cold cookie dough, these gluten-free, dairy-free, refined sugar-free cookies are almost too good to be believed. Eat one or two in the morning and feel fueled until lunchtime.
1. Line a baking tray or large plate with parchment paper and set aside.
2. In a large mixing bowl, add all three ingredients and mix until combined. If batter is too thin, add more coconut flour until a thick batter remains. If batter is too thick, add some milk, milk alternative, or water to thin it out.
3. Dust your hands in coconut flour and form small dough balls. Place them onto the parchment paper and gently press them down with a fork. Place in the freezer for at least 30 minutes to allow cookies to firm up.
