1. Whisk together the vinegar, oil, maple syrup, mustard, and salt in a large bowl. Add the red onion and stir to combine.
2. Let the mixture sit at least 10 minutes for the flavors to meld.
3. Add the slaw mix (or shredded cabbage), almonds, cranberries, and parsley to the dressing and toss to combine.
4. Taste and season with salt and pepper.
